Pancake Tuesday is coming up on 13th February 2018. Do you call it Pancake Tuesday? I know some call it Shrove Tuesday or Pancake Day. In this post, I have recipes for 2 versions of pancake batter and also 5 fun toppings to add to those yummy pancakes.

Pancake Batter 1
This makes crepe style. For years this was my go-to batter, it simple and easy to make.
- 1 cup milk
- 1 cup flour
- An egg
- Sieve the flour into a bowl
- Whisk egg and add to milk
- Make a well in the flour and add milk/egg
- Whisk until smooth
Pancake Batter 2
This makes fluffy pancakes, it’s our current favourite and it also works well when making waffles. I found this recipe 4 months ago on Allrecipes.
- 200g flour
- 3.5 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon caster sugar
- 300ml milk
- 1 egg, whisked
- 50g butter, melted
- Sieve flour, baking powder, salt and sugar in a large bowl.
- Make a well in the flour and pour in egg, milk and butter.
- Whisk until smooth.
Nutella and mini marshmallows. This is best used with batter 1.
Butter, Lemon and Sugar. When I was growing up, this is how I ate my pancakes. I didn’t get a good picture of this, you can view the video above to get a better look. This is best used with batter 1.
Maple Syrup. This is my favourite way to eat pancakes, even better if you add crispy bacon on the side.This is best used with batter 2.
Strawberries, Blueberries and Coulis. I have used Forest Fruit Coulis from Tesco. It adds a lovely sweetness. This can be used on either batter 1 or 2.
Chocolate Chips and whipped cream. For fun, I have added forest fruit coulis to this. I made sure to add chocolate chips to the batter before making. The more chocolate the better *sidenote, the whipped cream didn’t cooperate on this, it’s a mess.This is best used with batter 2.
So there we have it, 2 pancake batters and 5 fun topping selections to choose from.
